How is æ pronounced?
The pair ‘ae‘ or the single mushed together symbol ‘æ‘, is not pronounced as two separate vowels. It comes (almost always) from a borrowing from Latin. In the original Latin it is pronounced as /ai/ (in IPA) or to rhyme with the word ‘eye’. But, for whatever reason, it is usually pronounced as ‘/iy/’ or “ee”.

There is no one pronunciation of those letters, it depends on the language. In general though: ê (e circumflex) would be a longer /e/ sound, for whatever sound /e/ makes in the language it is used in. ā (a macron) would be a longer /a/.

The short Ä is pronounced like the “e” in the word “bet” in English. It is like saying “eh”. The long Ä on the other hand is simply taking the short one and keeping the sound, so making it longer. It is like saying the “ay” in “say”.

Ä or ä is one of the 4 extra letters used in German. It can be replaced by using the letters Ae or ae. In English language newspapers it is often written as A or a but this is not correct. Ä and ä are usually pronounced like the “e” in “bed”.

Can I write ß as SS?
It is acceptable, because it is also common to use “SS” for words written in up-case letters, as there is no capital “ß” in the official orthography rules, so the up-case version of “Straße” ist “STRASSE” (sometimes you see things like “STRAßE” which is just a horribly incorrect spelling).
Is ß still used?
While the ß was abandoned in Swiss orthography and a German reform in 1996 simplified (and reduced) its use, it is definitely still widely used and required. Specifically, the ß is used for a Voiceless alveolar fricative sound after a long vowel or diphtong. After a short vowel, ss is used.
